Lyme Bay Winery has an exciting new opportunity for an Assistant Winemaker to join our small team.
With its roots in cider production, Lyme Bay has transformed over the years to become one of England's leading producers of quality wines: from fruit to sparkling to premium liqueurs. We are now the largest mead producer in the UK and have several award-winning spirits in our portfolio.
When it comes to our English wines, we like to do things a little differently. We are one of few wineries that work with growers all over the country to source the best fruit, rather than relying on a single vineyard. That way we have access to different varietals, grown on different soils, in different microclimates; allowing us to make the best wines, from the best grapes, from the best vineyards.
This diverse role will allow you to aid in all stages of production for our whole range of products, with a focus on our award-winning wines.
Responsibilities to include:
• Inoculation, enrichment and other relevant additions
• Racking and transfers of juice / wine / finished product
• Basic lab analysis
• Filtration and preparation for bottling
• Equipment sanitation and maintenance
• Assisting in all aspects of the grape harvest
• Barrel work and maintenance
• Help in the production of Mead and Fruit Wines
• Maintaining accurate records of all winery work
• Always maintaining a safe work environment
• Assist in supervision and training of the team
Required Skills and Experience:
• Two years experience in a winery/cellar or equivalent
• Be confident working at heights and in all weather conditions
• Be able to lift 25kgs
• Have good literacy, numeracy, and IT skills
• Be able to self-motivate as well as work as part of a team
• Passion for wine and quality produce
• Experience in tasting wine
• Right to work in the UK
Desirable but not essential skills:
• Lab experience
• WSET Level 2 or higher
• Forklift licence
Hours: 4 day week, 40 hours minimum. Up to 72 hours (6 days) during harvest.
Salary: Competitive depending on experience
